HOUSTON, TEXAS: Houston's culinary scene is poised for another moment in the spotlight as Michelle Wallace, formerly the executive chef of Gatlin's BBQ and now the proprietor of B'tween Sandwich Co., prepares to showcase her talents in Season 21 of Bravo's acclaimed series 'Top Chef'.

The show will feature Wallace competing against 14 other chefs in Wisconsin, a state celebrated for its dairy, beer, and sausage - all potential ingredients for the challenges that await.

In the past, Wallace has been honored as the JBF TasteTwenty Chef and received a nomination for the 2021 CultureMap Rising Star Award in recognition of her culinary prowess. These accolades rightfully underscore her talent and dedication to the culinary arts over the years.

'Top Chef' Season 21 contestant Michelle Wallace fell in love with food while studying healthcare

Michelle Wallace discovered her passion for food and cooking while pursuing a degree in healthcare administration at Texas Southern University.

Initially cooking for friends, her love for culinary arts flourished over the years. It wasn't until her cousin, a player for the NFL's Houston Texans, began commissioning her to prepare meals for him and his teammates that Wallace realized her calling. This opportunity prompted her to pivot her career path and enroll in culinary school.

Wallace pursued her culinary education at the Art Institute of Houston, honing her skills and knowledge in the field. Additionally, she expanded her horizons by studying in China, further enriching her expertise with diverse cultural influences.

After completing her education, Michelle embarked on her culinary journey, starting at the renowned fine dining establishment, Pêche.

She then transitioned to a prestigious high-end catering company, which eventually paved the way for an opportunity to work alongside James Beard-nominated veteran Houston pitmaster, Greg Gatlin. 

Spending six years under Gatlin's mentorship, Michelle immersed herself in the art of pitmastering and refined her culinary skills.

As the Executive Chef at Gatlin’s BBQ, she made significant contributions to the establishment's success. Wallace played a pivotal role in expanding Gatlin's menu to include breakfast offerings.

Michelle Wallace competed on Food Network's 'BBQ Brawl'

Following her selection as part of James Beard's cohort TasteTwenty for their culinary series 'Taste America', Michelle embarked on a new venture by launching B'tween Sandwich Co. in Houston in 2023.

Initially starting with local pop-up events throughout the city, B'tween Sandwich Co. offers a unique fusion of culinary techniques, specializing in comfort food, smoked meats, and traditional fare tailored for sandwich enthusiasts with a taste for creativity.
