DURHAM, NORTH CAROLINA: Savannah Miller, the chef de cuisine at Durham's M Tempura, will be competing in the upcoming season 21 of 'Top Chef'. Savannah Miller will be among 14 other chefs competing on the show, set in Milwaukee, Wisconsin.
Her culinary prowess has made her a force to be reckoned with in Durham and is considered one of the most influential chefs there. Savannah draws inspiration from the abundance of locally available ingredients, firmly believing in the importance of supporting the ecosystem of purveyors in her surrounding area. Beyond the confines of the restaurant kitchen, Savannah finds joy in spending quality time at home with her friends, fiancé, and their two beloved pets.
'Top Chef' Season 21 contestant Savannah Miller started working in hospitality during her teenage years
Hailing from North Carolina, Savannah Miller's journey in hospitality began at a young age when she took on part-time roles in fast-casual dining establishments in the Southern Pines area during high school. Drawn to the close-knit atmosphere of restaurant families and fueled by her enduring passion for dining experiences, she made the decision to pursue a career in the hospitality industry.
This led her to pursue a career in cooking after attending the New England Culinary Institute. She gained valuable experience by joining the opening team at Matthew Jennings' renowned Boston restaurant, Townsman, as part of an internship. She later went on to become a pastry chef at Piedmont Restaurant.
Savannah Miller joined Chef Michael Lee to help open M Tempura in Durham
Following her tenure in New England cuisine, Savannah Miller chose to return to her roots and contribute to the culinary scene closer to home. In 2018, she partnered with Chef Michael Lee to launch M Tempura in Durham, assuming the role of Chef De Cuisine. Over the course of four years, she led the kitchen of a 30-seat tasting-menu restaurant, delving deep into the realms of Japanese and Korean cuisine while honing her culinary skills.
During her tenure at M Tempura, Savannah assumed the role of managing a kitchen team of four or more individuals, where she provided both creative and practical guidance on a daily basis, contributing significantly to the overall success of the business. Her responsibilities included overseeing all aspects of ordering, as well as coordinating and executing lunch and dinner services each day.
'Top Chef' Season 21 contestant Savannah Miller is the Executive Chef at Glasshouse KitchenChef
Savannah Miller embarked on her journey with Glasshouse Kitchen as their Executive Chef from its inception and continues to hold that position to this day. Joining Glasshouse presented an opportunity for Savannah to delve into something fresh and exhilarating in the Research Triangle—an area that had been somewhat overlooked in previous years.
Savannah has emphasized that her role as an Executive Chef encompasses much more than just cooking. While food is undoubtedly important, she estimates that it only makes up about 20% of her responsibilities. The majority of her time is dedicated to various managerial tasks, requiring her to wear multiple hats. As a manager, she oversees kitchen operations, staff training, and scheduling. Additionally, she serves as a mediator, resolving conflicts and fostering a positive work environment among her team members.
Savannah Miller loves to create dishes with a 'story'
In a conversation with Medium, Savannah shared her insights on crafting dishes that resonate with customers. She highlighted the importance of storytelling, emphasizing that customers are drawn to dishes with a compelling narrative. For example, at Glasshouse Kitchen, they feature a Green Goddess salad that utilizes every part of the local produce, including typically discarded radish and carrot tops. By blending these tops into a yogurt dressing, they create a unique and sustainable dish that connects with guests on a deeper level. Additionally, Savannah advocates for incorporating nostalgic flavors in innovative ways.
Rather than sticking to traditional recipes like clam chowder, she suggests reimagining familiar flavors with a twist, such as seared scallops with bacon lardon, fennel soubise, and pickled celery. This approach allows chefs to surprise and delight customers with unexpected flavor combinations and elevate their dining experience.
'Top Chef' Season 21 premieres on Bravo on Wednesday, March 20 from 9 pm. The episodes will be accessible the next day on Peacock.
