A condition known as dry eye affects normal vision and results in night blindness when vitamin A levels are low. Carrots' lutein and zeaxanthin antioxidants have also been shown to improve eye health. The lens and retina are shielded by these two organic compounds.

Carrots are a great snack for people who want to improve their diet with skin products. We are all aware that they can treat acne, dermatitis, rash, and various other skin conditions. They also contain Î2-carotene in addition to their antioxidant content.

2 easy recipes you can try at home using carrots

Carrot cheese rolls

Ingredients: 2 carrots grated, 1 cup grated processed cheese, 1-inch piece ginger grated, 1 finely chopped green chilly, 1 tsp garam masala, ½ tsp dried mango powder, ½ tsp red chili powder, 1 tsp Coriander and cumin powder, Finely chopped coriander leaves, 1 tbsp refined wheat flour for binding, Oil for shallow frying, salt to taste.

Method: Add the salt to the grated carrot and lightly saute it. Add the ginger and green chile, toss, and cook for a minute. Sprinkle all of the masalas. Discard the flame. Mix cheese while it is still hot. Mash in the coriander leaves until the mixture is uniform. Cool this mixture. Make a dough that is slightly dense by adding refined flour to the mixture. Divide it equally.  Roll each portion into an oblong shape with your greased palm. In a pan, heat oil and shallow fry the rolls so that all sides are cooked evenly. Tomato sauce and green chutney are optional extras.

Carrot salad with flax seeds

Ingredients: 2 large grated carrots, 2 chopped green chilies, 1 tsp toasted flax seeds, salt to taste, 1 tsp lemon juice, and coriander leaves for garnish

Method: Combine carrot, green chilies, flax seeds, and salt. Drizzle lemon juice. Give them a good mix. Garnish with finely chopped coriander leaves.
